Chocolate Cake

Yield: Two 9” cakes, one 9” x 13” cake or 24 cupcakes

Ingredients

1 pouch Cup4cup Chocolate Cake Mix

1 ¼ cup (290g) Milk, room temperature

¾ cup (160g) Vegetable oil

4 large Eggs, room temperature

 

 

Instructions

  1. Preheat oven to 325ºF. Prepare cake pans with butter or oil and parchment paper, or baking cups if making cupcakes.
  2. In a large mixing bowl whisk egg, milk, and oil together until combined. Add Cup4Cup Chocolate Cake Mix and whisk until smooth
  3. Pour batter into cake pans and tap on counter to distribute evenly.
  4. Place pans on middle rack and bake for 30 to 40 minutes, or until toothpick comes out clean.
  5. For cupcakes, bake 25 to 30 minutes. Cool for 5 minutes before transferring to cooling rack.
  6. Cool completely before decorating.

CUP4CUP CHOCOLATE FROSTING

1 ¼ cup (280g) Unsalted butter, room temperature

4 ¼ cups (467g) Sifted powdered sugar

¾ cup (69g) Cocoa powder

3 tablespoons (44g) Milk, room temperature

2 tablespoons (30g) Vanilla extract

¼ teaspoon (1g) Salt

 

  1. Using a mixer, cream butter, and powdered sugar for 1 minute on medium-low speed.
  2. Reduce speed to low add vanilla extract, milk, salt, and cocoa powder mix for 1 minute. For vanilla frosting exclude cocoa powder.
  3. Continue mixing for 3 minutes on medium speed or until fluffy.
