Chocolate Cupcakes

Ingredients

FOR THE CUPCAKES:

1 Pouch Cup4Cup Chocolate Cake Mix

1 ¼ cups whole milk

¾ cups vegetable oil

4 large room temperature eggs

 

FOR THE FROSTING:

1 ¼ cups room temperature unsalted butter 

¼ teaspoon salt 

cups sifted powdered sugar 

2 tablespoons vanilla extract 

3 tablespoons room temperature milk 

1 teaspoon orange gel food coloring 

Instructions

  1. Preheat oven to 325°F.
  2. In a large bowl whisk room temperature eggs, milk, and oil together until combined.
  3. Add Cup4Cup cake mix, and whisk until smooth.
  4. Fill lined cupcake tins ½ to 2/3 full.
  5. Bake until a toothpick inserted into the center comes out clean, ~20-25 minutes. Allow to cool before frosting.

FOR THE FROSTING:

  1. Using a mixer on medium-low speed, cream butter and powdered sugar together until smooth, ~1 minute. 
  2. Reduce speed to low and add vanilla extract, milk, salt and food coloring 
  3. Mix until all ingredients are incorporated and then increase speed to medium for 1 minute. 
  4. Stop mixer and scrape down sides.  Continue mixing on medium for 3 additional minutes. 
  5. Frost Cupcakes.
