Spiced Apple Cupcakes with Whipped Goat Cheese Frosting and Bacon Sprinkles

Ingredients
Cupcakes
3 cups (420 g) CupCup Multipurpose flour
1 teaspoon (3 g) baking powder
1 teaspoon (4 g) baking soda
1 tablespoon (12 g) kosher salt
1 teaspoon (2 g) ground ginger
¼ teaspoon (0.5 g) ground clove
1 cup (200 g) granulated sugar
1 cup (215 g) brown sugar
1 ¼ cup (270 g) vegetable oil
3 (150 g) large eggs
2 ½ cups (275 g) grated apples, drained well
Frosting and Bacon topping
8 ounces (227 g) Fresh goat cheese, room temperature
4 ounces (113 g) Butter, room temperature
3 tablespoons (60 g) Maple syrup
4 ounces (113 g) Slices bacon
Instructions
- Preheat oven to 350°F, line 2 cupcake pans with paper liners.
- In a bowl, mix all the dry ingredients.
- Whisk oil and eggs together in a separate bowl. Add grated apples, whisking to incorporate.
- Add the apple mixture to the flour mixture and mix until just incorporated.
- Divide the batter into lined cupcake pan and bake for 20-30 minutes or a toothpick inserted into the center comes out clean. Rest for 5 minutes then cool on a rack for 10-15 minutes.
- For the frosting, in a stand mixer, whip the softened goat cheese at medium speed for 3 minutes. Add in softened butter and drizzle in maple syrup while whipping on medium speed. Allow the mixture to whip for another 2-3 minutes.
- Cook bacon in a sauté pan over medium heat until bacon is crispy. Chop up sliced bacon very finely with a knife and place on a paper towel lined tray to cool and dry.
