Gougères

Yield: 20-25 Gougères

Ingredients

1 cup+ 1 tablespoon (250g) water

7 tablespoons (100g) butter

1 ¼ teaspoon (7.5g) salt

5 (250g) large eggs

1 cup (140g) Cup4Cup Multipurpose Flour

1 1/4 cup (100g) Gruyere Cheese

Instructions

  1. Combine water, butter and salt in a saucepan, bring to a boil making sure all of the butter is melted/
  2. Remove from heat and add all the flour at once. Using a wooden spoon vigorously stir in the flour making sure there are no lumps. Return saucepan to medium heat and cook, stirring frequently.
  3. Cook for about 3-4 minutes until mixture has formed a ball and there is a thin starchy film forming on the bottom of the pan. Transfer to a stand mixer with paddle attachment. Slightly cool the dough by mixing on medium speed for about two minutes.
  4. Add eggs one at a time, making sure each is fully beaten into the dough. Start on low-medium speed and increase as you add the eggs. Stop and scrape down the bowl and beat at high speed until a lump free batter starts to develop.
  5. Add ¾ cup of the gruyere cheese, transfer the dough to a plastic piping bag with a ½” round piping tip, doing your best to avoid excessive air pockets.
  6. Line a baking sheet with parchment paper or a silicone baking mat. If using parchment, it may be helpful to put a little dab of dough between each of the corners of parchment and the baking sheet to hold it in place.
  7. Compress the piping bag and pipe balls of dough about 1-1/2” in diameter onto the sheet. Keep each ball about 1-1/2 inches apart.
  8. Moisten your index finger and lightly flatten the peaks of the piped dough. Sprinkle the tops with the remaining gruyere cheese. NOTE: at this point the dough may be frozen and stored wrapped for future use
  9. Lower the oven temperature to 375F and add the gougères, cook for 30-35 minutes until a nice golden brown. Once cooked, remove the from oven.
  10. Serve gougères while hot from the oven for the best version, but they may be reheated for a few minutes in a warm oven.
