Cup4Cup Hostess Cupcakes

Ingredients

 

Cupcakes

2 cups (400 g) granulated sugar

1 ¾ cups (245 g) Cup4Cup four

¾ cup (90 g) of unsweetened cocoa powder

1 ½ teaspoon (5 g) baking powder

1 teaspoon (4 g) baking soda

1 teaspoon (3.5 g) kosher salt

2 large eggs, at room temperature

1 cup (240 g) whole milk

½ cup (110 g) vegetable oil

1 teaspoon (5 g) vanilla extract

1 cup (235 g) boiling water

 

Cream filling

1 cup (226 g) mascarpone cheese

3 to 4 (85-110 g) tablespoons whole milk

¾ c (50 g) granulated sugar

¼ tsp (2 g) vanilla extract

A pinch of kosher salt

 

Dark Chocolate Glaze

⅔ cup (145 g) heavy cream

2 tablespoons (40 g) corn syrup

4.5 ounces (130 g) 70% dark chocolate

Instructions

 

  1. Preheat oven to 350°F.
  2. In a large bowl, whisk together Multipurpose flour with cocoa powder, sugar, baking powder, baking soda and kosher salt.
  3. Mix eggs, vegetable oil, whole milk and vanilla extract, add to dry ingredients, mixing until fully incorporated. Stir boiling water into batter.
  4. Line one cupcake tin with cupcake liners and fill cups evenly with batter.
  5. Bake for 20-25 minutes or until cupcakes are done in the center and a toothpick comes out clean.
  6. Cool baked cupcakes to room temperature.
  7. While cupcakes cool, mix mascarpone and milk for the cream filling. Add remaining ingredients and whip together until smooth. Transfer into a piping bag fitted with a pastry tip.
  8. For the glaze, pour heavy cream and corn syrup into a pot and bring to a boil. Once hot, pour mixture over the chocolate and mix until all of the chocolate is melted. Use immediately.
  9. To assemble: Pipe the filling into the cooled cupcakes, inserting it into the top-center of the cupcakes. Invert the filled cupcakes into the chocolate glaze to “frost” each of the cupcakes. Repeat the dipping process once more to attain a thicker glaze.
  10. Set the cupcakes aside in a cool area or refrigerator to set the glaze.
    For the design on top, melt a small amount of white chocolate and decorate as desired.
