Spiced Apple Cupcakes with Whipped Goat Cheese Frosting and Bacon Sprinkles

Ingredients

 

Cupcakes

3 cups (420 g) CupCup Multipurpose flour

1 teaspoon (3 g) baking powder

1 teaspoon (4 g) baking soda

1 tablespoon (12 g) kosher salt

1 teaspoon (2 g) ground ginger

¼ teaspoon (0.5 g) ground clove

1 cup (200 g) granulated sugar

1 cup (215 g) brown sugar

1 ¼ cup (270 g) vegetable oil

3 (150 g) large eggs

2 ½ cups (275 g) grated apples, drained well

 

Frosting and Bacon topping

8 ounces (227 g) Fresh goat cheese, room temperature

4 ounces (113 g) Butter, room temperature

3 tablespoons (60 g) Maple syrup

4 ounces (113 g) Slices bacon

Instructions

  1. Preheat oven to 350°F, line 2 cupcake pans with paper liners.
  2. In a bowl, mix all the dry ingredients.
  3. Whisk oil and eggs together in a separate bowl. Add grated apples, whisking to incorporate.
  4. Add the apple mixture to the flour mixture and mix until just incorporated.
  5. Divide the batter into lined cupcake pan and bake for 20-30 minutes or a toothpick inserted into the center comes out clean. Rest for 5 minutes then cool on a rack for 10-15 minutes.
  6. For the frosting, in a stand mixer, whip the softened goat cheese at medium speed for 3 minutes. Add in softened butter and drizzle in maple syrup while whipping on medium speed. Allow the mixture to whip for another 2-3 minutes.
  7. Cook bacon in a sauté pan over medium heat until bacon is crispy. Chop up sliced bacon very finely with a knife and place on a paper towel lined tray to cool and dry.
