Wholesome Graham Crackers

Ingredients
3 ⅓ cups (475 g) Cup4Cup Wholesome Flour
½ teaspoon (2 g) Kosher salt
1 teaspoon (4 g) Baking soda
2 teaspoons (5 g) Ground cinnamon
1 ¼ cups (285 g) Unsalted butter, at room temperature
1 cup (140 g) Dark brown sugar
¼ cup (50 g) Granulated sugar
2 tablespoons (42 g) Honey
½ teaspoon (2.5 g) Vanilla extract
Instructions
- In a medium bowl, mix flour, kosher salt, baking soda and cinnamon.
- In the bowl of an electric stand mixer fitted with a paddle attachment, cream the butter until it is light and fluffy.
- Scrape the sides and bottom of bowl with a rubber spatula. Add brown sugar, granulated sugar, honey and vanilla extract. Continue to cream until the sugar dissolves into the butter.
- Scrape the sides and bottom of bowl with a rubber spatula. On medium speed, add flour blend and mix until homogenous. The dough should come together into large balls that will combine with other balls of dough.
- Between 2 sheets of parchment paper, roll dough with rolling pin until it is ½” thick. Divide dough up into smaller portions if needed to make it easier to roll out.
- Wrap dough in plastic and refrigerate for 1 hour.
- Preheat your oven to 350°F
- Remove dough from refrigerator, roll it out to 1/16” and cut it into your desired shapes. To create the graham cracker look poke top with a fork.
- Refrigerate graham crackers for 10 minutes, remove and bake for 20-25 minutes.
- Bake 20-25 minutes.
- Allow graham crackers to rest until they’re room temperature. Store in an air tight container.
