Ingredients
2 cups (445g) Lukewarm water
2 ½ tablespoons (30g) Olive oil
2 tablespoons (7g) Kosher salt
2 tablespoons (30g) Sugar
1 egg, lightly beaten
4 ½ cups (615g) Cup4Cup Ancient Grains Flour
1 package (7g) instant dried yeast
Non-stick vegetable oil spray
Cornmeal (or more Cup4Cup Ancient Grains Flour)
Instructions
- Combine all the ingredients in a stand mixer fitted with a paddle attachment.
- Mix at medium speed for about 5 minutes until the ingredients form a smooth, very thick batter/dough.
- Scrape down the sides of the work bowl and cover with plastic wrap.
- Allow the dough to rise until light and airy- about 45-60 minutes.
- While the dough is proofing, preheat your oven to 500∞F.
- Flour a clean surface with Ancient Grains.
- Weight out the dough into (8) 140g portions. Dust hands with flour to prevent from sticking.
- Sprinkle Ancient Grains on the dough and roll a ball.
- Roll ball out into 6-inch rounds, making sure to rotate to prevent from sticking.
- Place on sheet tray and bake at 500∞F for 5 minutes.
- Serve as desired.
