Ingredients

2 cups (445g) Lukewarm water

2 ½ tablespoons (30g) Olive oil

2 tablespoons (7g) Kosher salt

2 tablespoons (30g) Sugar

1 egg, lightly beaten

4 ½ cups (615g) Cup4Cup Ancient Grains Flour

1 package (7g) instant dried yeast

Non-stick vegetable oil spray

Cornmeal (or more Cup4Cup Ancient Grains Flour)

Instructions

  1. Combine all the ingredients in a stand mixer fitted with a paddle attachment.
  2. Mix at medium speed for about 5 minutes until the ingredients form a smooth, very thick batter/dough.
  3. Scrape down the sides of the work bowl and cover with plastic wrap.
  4. Allow the dough to rise until light and airy- about 45-60 minutes.
  5. While the dough is proofing, preheat your oven to 500F.
  6. Flour a clean surface with Ancient Grains.
  7. Weight out the dough into (8) 140g portions. Dust hands with flour to prevent from sticking.
  8. Sprinkle Ancient Grains on the dough and roll a ball.
  9. Roll ball out into 6-inch rounds, making sure to rotate to prevent from sticking.
  10. Place on sheet tray and bake at 500F for 5 minutes.
  11. Serve as desired.
