Peach Crisp

Ingredients
Filling:
5 ripe peaches (sliced)
1 lemon (juice and zest)
4 tablespoons unsalted butter
¼ cup brown sugar
1 teaspoon vanilla extract
1 tablespoon cinnamon (ground)
½ teaspoon kosher salt
Streusel:
2 ¾ cups Cup4Cup Ancient Grains flour
½ cup oats
¾ cup sugar
8 tablespoons butter, chilled and cut into ½ inch cubes
½ teaspoon kosher salt
Instructions
- Preheat oven to 350°F.
- Place sliced peaches in a large bowl with lemon juice and zest and toss to coat.
- Using large sauce pot melt the first 4 tablespoons of butter on medium low heat. Add sugar, vanilla extract, cinnamon, and salt. Stir until sugar is dissolved.
- Remove from heat and add peaches, stirring gently until fully coated.
- In a large bowl combine Cup4Cup Ancient Grains flour, sugar, oats, and chilled butter. Using your fingers, mix until it forms small, pea sized clumps and resembles streusel.
- In a large 9×13 baking dish, add ½ of the streusel and form an even, unpacked layer.
- Add the peach filling, spreading it evenly and top with remaining streusel.
- Transfer to oven and bake 35-40 minutes.
