Peach Crisp

5 ripe peaches (sliced)

1 lemon (juice and zest)

4 tablespoons unsalted butter

¼ cup brown sugar

1 teaspoon vanilla extract

1 tablespoon cinnamon (ground)

½ teaspoon kosher salt



2 ¾ cups Cup4Cup Ancient Grains flour

½ cup oats

¾ cup sugar

8 tablespoons butter, chilled and cut into ½ inch cubes

½ teaspoon kosher salt


  1. Preheat oven to 350°F.
  2. Place sliced peaches in a large bowl with lemon juice and zest and toss to coat.
  3. Using large sauce pot melt the first 4 tablespoons of butter on medium low heat.  Add sugar, vanilla extract, cinnamon, and salt. Stir until sugar is dissolved.
  4. Remove from heat and add peaches, stirring gently until fully coated.
  5. In a large bowl combine Cup4Cup Ancient Grains flour, sugar, oats, and chilled butter. Using your fingers, mix until it forms small, pea sized clumps and resembles streusel.
  6. In a large 9×13 baking dish, add ½ of the streusel and form an even, unpacked layer.
  7. Add the peach filling, spreading it evenly and top with remaining streusel.
  8. Transfer to oven and bake 35-40 minutes.
